Creating beautiful chocolate shards is surprisingly easy and adds a professional, artistic touch to your homemade cakes and desserts. Here’s a detailed, step-by-step guide to achieving these stunning edible decorations:
- **Melt Your Chocolate:** Start by gently melting your preferred chocolate or candy melts. You can use high-quality chocolate chips, store-bought candy melts, or even chocolate candiquik or various colored Wilton candy melts for different effects. Use a double boiler or microwave in short bursts, stirring frequently, to ensure smooth, lump-free chocolate.

Preheat the oven to 350ºF (175ºC).

Using butter, generously grease the bottom and sides of three 6-inch round cake pans or springform pans. Line the bottoms with a round piece of parchment paper. To ensure even baking and prevent doming, consider placing a bake-even strip around each pan. You can easily make your own homemade bake-even strip by cutting a towel or piece of cloth to fit the size of your pan. Get the fabric thoroughly wet, then squeeze out the dripping water (but don’t wring it completely dry). Secure the damp fabric snugly around the pan with a safety pin.

In a small mixing bowl, combine the cocoa powder, all-purpose flour, baking powder, baking soda, and salt. Place a plastic cutting board or a metal baking sheet on your counter. Lay a large piece of wax paper on top of this flat surface.

Pour the melted chocolate onto the wax paper. Use an offset spatula or the back of a spoon to spread the chocolate into a thin, even layer across the entire surface of the wax paper.

Immediately pour the hot heavy cream over the chocolate chips. Allow the mixture to stand undisturbed for 1-2 minutes; this allows the chocolate to melt thoroughly.

It’s often easiest to start with a bit more frosting on the cake and then scrape off the excess as you smooth it out.

Transfer the entire crumb-coated cake to the freezer or refrigerator for at least 20 minutes to allow the frosting to firm up. This step makes the final frosting much easier and cleaner.
