- ½ cup (118ml) milk, 1%, 2% or whole
- ½ cup (118ml) vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup (198g) granulated sugar
- 1 ½ cups (180g) all-purpose flour
- 2 Tbsp instant espresso powder
- 1 tsp baking powder
For the Espresso Frosting:
- 1 cup (226g) unsalted butter, 2 sticks, at room temperature
- 3-5 cups (339-567g) powdered sugar
- 1 oz brewed espresso, cooled to room temperature (can replace with strong brewed coffee)

- Preheat your oven to 350ºF (175ºC) and line a 12-cup muffin pan with paper liners.
- In a large mixing bowl, whisk together the milk, vegetable oil, eggs, and vanilla extract until well combined.
