Instructions
Cookie Bars
- Preheat the oven to 350ºF (175°C).
- In a medium-large mixing bowl, combine the butter, granulated sugar, and brown sugar. Beat using an electric mixer for 1-2 minutes until light and fluffy.

1/2 cup (107g) Domino® Light Brown Sugar - Add in the eggs and almond extract. Beat until well combined.
2 large eggs,
1/4 tsp almond extract - In a separate small bowl, combine the all-purpose flour, baking powder, and salt. Gently stir to combine. Gradually add these dry ingredients to the wet ingredients, mixing by hand with a spatula until just incorporated. Do not overmix.
2 cups (240g) all purpose flour,
1 tsp baking powder,
1/2 tsp salt - Lightly spray a 9×13 inch baking pan with non-stick spray. Scoop the cookie dough into the pan and use your hands to press it into an even, flat surface. *For easier handling, spray your hands with a little non-stick spray before pressing the dough.
- Bake for 24 minutes, or until a toothpick inserted into the center comes out clean. Immediately after removing from the oven, place the pan directly into the refrigerator (I recommend placing it on a trivet to protect your fridge shelf). Allow the bars to cool completely for at least 1 hour.
Chocolate Buttercream
- In a large mixing bowl, beat the room-temperature butter using an electric mixer until fluffy, about 1 minute.
1 cup unsalted butter
- Add in the cocoa powder and mix until combined. Begin adding the confectioners’ sugar, 1 cup at a time. Mix by hand first to prevent a cloud of sugar, then beat with the electric mixer. Continue adding powdered sugar until the frosting reaches a good spreadable consistency and tastes delicious to you. If the frosting becomes too thick, add a dash (1-2 teaspoons) of milk or heavy cream.
