February proved to be a whirlwind of a month, packed with unexpected challenges, a long-awaited escape to the Caribbean, and the comforting routines of home. An Unexpected Start: Battling a Viral Infection and Vertigo

February kicked off with a rather unwelcome surprise. Just a week before our much-anticipated Caribbean cruise, I was struck down by a viral ear infection. What followed was an absolutely debilitating bout of vertigo – an experience I had never encountered before. The world spun endlessly, making even the simplest movements a monumental task. I spent the better part of the week couch-bound, my travel plans hanging precariously in the balance. Doctor visits and physical therapy offered little solace, as is often the case with viral ailments; time and rest were the only prescribed remedies.

During this challenging period, my incredible husband, Ryan, truly shone. He consistently steps up, providing unwavering support and demonstrating his love in countless ways, especially when I’m not feeling my best. His patience, care, and willingness to manage everything while I recovered were a testament to our partnership, making an otherwise miserable week a little more bearable. It’s in these moments of vulnerability that you truly appreciate the strength of your bond.

Michigan’s Wild Winter and Community Connections

Adding to the unusual start of the month, Michigan decided to throw some bizarre weather our way. That same week, we experienced a peculiar mix of heavy ice, followed by an impressive blanket of snow. This winter, in general, has been particularly rough for us here in Michigan, characterized by relentless cold, snow, and ice that tested everyone’s patience. The dramatic swings between icy conditions and deep snowfall certainly made for a memorable, albeit challenging, landscape.

Amidst the winter chill, a heartwarming wave of creativity kept us warm. It was an absolute delight to see all the incredible creations from our readers and followers who tried out our Super Bowl recipes! Your enthusiasm for cooking and sharing your culinary successes always brings a smile to my face. Seeing your unique twists and presentations of our recipes is one of the most rewarding aspects of what we do, fostering a wonderful sense of community around our shared love for food.

Our Long-Awaited Caribbean Escape: First Vacation in Six Years!

The true highlight of February, however, was our fantastic 7-day cruise to the Western Caribbean! This wasn’t just any trip; it was our first vacation in six long years, making it an incredibly special and much-needed getaway. We boarded the magnificent Symphony of the Seas from Royal Caribbean, a ship renowned for its innovative design and endless amenities. This grand vessel truly felt like a floating city, offering something for every taste and interest.

As first-time cruisers in a long while, we certainly learned a great deal about what we enjoy (and perhaps don’t enjoy) in a vacation setting. These insights will undoubtedly shape our future travel plans. During our journey, we also indulged in a fun and educational sushi-making class on board. It was fascinating to learn the intricate techniques, and we quickly discovered that the consistency of the rice is absolutely paramount to perfect sushi – a culinary secret we’ll definitely carry home with us!

Island Explorations and Shipboard Thrills

Life on the Symphony of the Seas offered a vibrant blend of relaxation and exhilaration. The ship’s boardwalk area, especially at night, transformed into a dazzling spectacle of lights and energy. The first photo below showcases this lively scene, with the impressive Abyss slides dominating the background. These twin slides plummet a thrilling 10 stories, a truly formidable challenge! Ryan, ever the adventurer, bravely took the plunge one day, but I wisely opted to skip it. The thought of descending a 10-story slide on an already rocking ship sounded like a recipe for instant queasiness – definitely not for me!

Our journey also took us to the breathtaking shores of Roatan, Honduras. Our day at the beach there was simply idyllic – the weather was gloriously hot, and the turquoise waters were incredibly inviting. The highlight of our visit to Roatan, and perhaps of the entire cruise, was our snorkeling excursion. Exploring the vibrant coral reefs and swimming alongside a kaleidoscope of tropical fish was an unforgettable experience, offering a glimpse into an enchanting underwater world that truly captivated my senses.

Discovering New Perspectives: Segways and Spectacular Shows

Our second excursion brought us to Costa Maya, where we embarked on a lively segway tour. Ryan and I have a fondness for exploring cities via segway, having done it twice before, and it offers such a unique perspective. Gliding through the streets, soaking in the local atmosphere, and seeing the sights from a slightly elevated vantage point is always an enjoyable adventure. However, the heat in Costa Maya was intense! As a ‘Midwest girl,’ I confess I was quite unprepared for the sheer intensity of the tropical sun and humidity, which added an extra layer of challenge to our otherwise fun exploration.

Evenings on the ship were filled with world-class entertainment. The Symphony of the Seas boasts an array of spectacular performances, and the Aqua Theater show was particularly astounding. This incredible production combined water features, mesmerizing dancing, breathtaking acrobatics, and high-diving feats into a seamless, thrilling spectacle. The skill and artistry of the performers were truly awesome, leaving the audience spellbound each night. It was an absolute joy to watch such a dynamic and creative performance under the starry Caribbean sky.

Bahamian Beauty and Unforeseen Encounters

Our fourth port day took us to the vibrant capital of Nassau, Bahamas, and a visit to the iconic Atlantis Resort. The resort itself is simply breathtaking – an architectural marvel designed to immerse visitors in a world of luxury and wonder. Everywhere you looked, there was a picture-perfect vista, from the intricate sculptures and grand fountains to the sprawling marine habitats and pristine beaches. The sheer scale and beauty of Atlantis were truly captivating, making it a destination in itself.

The second photo perfectly illustrates the grandeur of the Atlantis Resort. Spending the day exploring its various attractions, marveling at the marine life, and simply soaking in the opulent atmosphere was an experience filled with awe and wonder. It’s a place that truly lives up to its reputation for stunning aesthetics and incredible offerings.

Reflections on Our Cruise and the Joy of Returning Home

Our time at Atlantis also included an anticipated dolphin interaction, for which we donned our sweet wetsuits, as seen in the first photo. Unfortunately, the dolphins seemed to have their own agenda that day and weren’t cooperating, leading to a fair bit of waiting and ultimately, a modified experience. Despite this minor hiccup, we generally enjoyed our time at Atlantis and the overall cruise journey. However, the trip wasn’t without its challenges. My anxiety often flares when traveling, especially with the constant stimulation and logistics of a large cruise ship, which added a layer of stress.

Through this experience, we learned a lot about how we prefer to vacation in the future. While the cruise offered many amazing moments, we’ve come to realize that this particular style of travel might not be our ideal choice moving forward. The fast pace and structured environment made us appreciate different kinds of trips where we can have more flexibility. The ultimate joy, though, was returning home to our furry companion, Salsa. The second photo perfectly captures his unwavering affection; he literally did not leave my side for 24 hours once we walked through the door. His love and missed presence were palpable, reminding us that there’s truly no place like home.

Settling Back In: Comfort Food and Priceless Pet Moments

Getting back into our regular routine after a vacation, especially one as eventful as this, felt incredibly good, though post-vacation recovery is certainly a real phenomenon! I think I essentially hibernated for about 18 hours straight once we were safely back home, catching up on much-needed sleep. Despite the exhaustion, there were plenty of comforting moments that quickly brought us back to normal. One such moment involved baking special birthday cookies for one of my nieces and sending them off to Minnesota – a small gesture that brings immense joy.

Another glorious highlight of returning to our own kitchen was enjoying a truly delicious spaghetti dinner, complete with homemade gluten-free garlic bread. After a week of eating the same types of dishes on the ship, this simple, comforting meal felt absolutely heavenly. It was a stark reminder of the unique pleasure of home-cooked food and the joy of familiar flavors. These simple acts of cooking and connecting felt like a warm embrace after our adventures, solidifying the feeling of being truly home again.

Everyday Mishaps and Enduring Affection

Life, of course, isn’t always grand adventures and cozy meals. Sometimes, it’s about navigating unexpected minor disasters! You can’t quite tell from the picture, but I had a rather unfortunate incident where I broke my glass jar of foundation. It exploded, sending expensive liquid flying all over the bathroom, creating quite the mess! At $50 a container, it’s certainly not a cheap item to replace, and I’ve since purchased another bottle and am now exceedingly careful with it. I even contemplated wrapping it in bubble wrap for extra protection!

Balancing these little mishaps are the constant, heartwarming moments with our beloved Salsa. The second photo is just another adorable glimpse of him snuggling with me, showcasing his unique and incredibly endearing way of showing affection: with his tail playfully tucked right into my face. These daily doses of unconditional love and quirky companionship are truly priceless, reminding us that even the simplest moments at home are often the most cherished.
