Ingredients

  • 15.25
    oz (405g)
    peanut butter oreos ,
    1 package, pulsed in food processor until fine crumbs
  • 8
    oz (226g)
    regular cream cheese ,
    1 package, softened to room temperature
  • chocolate candiquik,
    or other chocolate melting wafers
  • 1
    Tbsp
    vegetable shortening or coconut oil
  • Brown sprinkles,
    chocolate flakes or brown jimmies work great for the acorn cap
  • Pretzel sticks,
    broken into small pieces for stems

Instructions

  1. Ensure your cream cheese is completely softened to room temperature. This is key for a smooth, lump-free mixture.
  2. Place half of the peanut butter Oreos into a food processor and pulse until they form fine crumbs. Add the remaining Oreos and continue pulsing until all cookies are uniformly fine. Transfer to a large mixing bowl.

  3. Add the softened cream cheese to the Oreo crumbs. Mix thoroughly, either with a sturdy spoon or your hands, until the mixture is very well blended and forms a cohesive, pliable dough.

  4. Using a tablespoon as a guide (I usually use a bit more than one tablespoon per acorn), form the mixture into acorn shapes. Start by rolling it into an elongated ball, then gently pinch and taper one end to create the distinct acorn point.
  5. Arrange the shaped acorns on a baking sheet lined with a silicone mat or wax paper. Place them in the refrigerator to chill for at least 1 hour, or until firm. Avoid freezing, as this can cause chocolate cracking later.
  6. Once the acorns are firm, prepare your chocolate. Melt the chocolate candiquik (or melting wafers) with the shortening or coconut oil in a double boiler or a chocolate melting pot. Keep the chocolate warm throughout the dipping process. Work in small batches (3-5 acorns at a time) to prevent the chocolate from cooling too rapidly. Dip each acorn, ensuring it’s fully coated. Use a fork to lift it out, gently tap your wrist to remove excess chocolate, and scrape the bottom of the fork on the edge of the pot. Carefully transfer the dipped acorn back to the lined baking sheet, using a toothpick to assist if needed.

  8. To add the “cap” of the acorn, dip the wider, top portion of a hardened acorn back into the melted chocolate. Immediately dip that chocolate-coated section into a bowl filled with brown sprinkles, gently pressing to adhere.

  9. For the “stem,” dip one end of a small piece of pretzel stick into the melted chocolate and gently press it into the top center of the sprinkle-covered cap.
