These fun and vibrant donuts are crafted with a fluffy baked base, a smooth white chocolate glaze, and decorated with meticulously placed fruity pebbles and fluffy shredded coconut. A truly eye-catching dessert!

  • Glass Mixing Bowl
  • My Favorite Spatula!
  • Piping Bag (or Ziploc bag)
  • Small, clean paint brush (new, never used for painting)

Ingredients

For the Donuts:

  • 1 cup (120g) all-purpose flour
  • 3 Tbsp granulated sugar
  • 1 tsp baking powder
  • ½ tsp salt
  • 6 Tbsp milk
  • 1 large egg
  • ½ tsp vanilla extract
  • 3 Tbsp vegetable or canola oil

For the Glaze and Toppings:

  • 4 rectangles vanilla candiquik (or white melting chocolate)
  • 1 Tbsp vegetable shortening
  • Fruity pebbles, sorted by color (a small amount of each color is sufficient for decoration, no need to sort the entire box!)
  • Shredded coconut, a small amount for clouds

Instructions

Perfectly Baked Donut Base

  1. Preheat your oven to 325 degrees F (160 degrees C). Lightly spray a donut pan with cooking spray. Use a paper towel to gently spread and remove any excess spray, ensuring an even, non-stick surface.
  2. In a large mixing bowl, combine the dry ingredients: flour, sugar, baking powder, and salt. Whisk them together thoroughly to ensure they are well distributed.
  3. In a separate bowl, whisk together the wet ingredients: milk, egg, vanilla extract, and vegetable/canola oil until smoothly blended. Gradually add the wet ingredients to the dry ingredients, stirring just until combined. Be careful not to overmix, as this can lead to tough donuts. A few lumps are perfectly fine.
  4. Transfer the donut batter into a large piping bag. If you don’t have one, a sturdy Ziploc bag with one corner snipped off will work just as well. Pipe the batter evenly into each donut cavity in your prepared pan, filling each hole approximately two-thirds full.
  5. Bake for 10 minutes, or until a wooden toothpick inserted into a donut comes out clean. This indicates they are fully cooked.
  6. Once baked, remove the pan from the oven and let the donuts cool in the pan for about 10 minutes. This allows them to firm up slightly before you transfer them carefully to a wire rack to cool completely. Cooling thoroughly is crucial before glazing.

Crafting the Silky White Chocolate Glaze

  1. Melt the vanilla candiquik (or white melting chocolate) with the vegetable shortening. You can do this in a microwave-safe bowl on 50% power for 2 minutes, stirring every 20-30 seconds until smooth. Alternatively, I prefer to melt it gently in a small saucepan over very low heat, stirring continuously, which gives more control.
  2. For easy dipping, transfer the melted chocolate to a small, shallow dish that’s wide enough to comfortably dip a donut. Holding onto the edges of a cooled donut, dip one side into the melted glaze. Lift the donut, allowing any excess chocolate to drip back into the dish for a few seconds. Place the glazed donuts back onto the wire rack to allow the chocolate to set completely before proceeding with the Fruity Pebbles.

The Art of the Fruity Pebbles Rainbow

  1. Keep your melted white chocolate glaze slightly warm during this decoration process; it will act as the “glue” for your fruity pebbles. Using a small, clean paintbrush, paint a thin arc of white chocolate onto a glazed donut. Immediately start applying the red fruity pebbles along this arc, pressing them gently to adhere. Continue this process, color by color (red, orange, yellow, green, blue, and purple), creating distinct arcs for your rainbow. Work slowly and meticulously for the best visual effect.
  2. Once your vibrant rainbow is complete, paint a small amount of white chocolate glaze underneath both ends of the rainbow. Immediately press a small amount of shredded coconut onto these spots to create whimsical “clouds” for your rainbow.
  3. Allow the donuts to set completely, then enjoy your beautiful and delicious Rainbow Donuts! Store any extras in an airtight container at room temperature for up to 2-3 days to maintain freshness.
