Delicious Pineapple Upside Down Monkey Bread, a creative twist on a classic dessert.

Tropical Indulgence: Easy Pineapple Upside Down Monkey Bread Recipe

Welcome to Pineapple Week! This week, we’re diving deep into the vibrant, sweet, and tangy world of pineapple, bringing you three irresistible recipes. To kick things off, we’re unveiling a truly unique creation: a creative twist on the beloved classic pineapple upside down cake, transformed into a fun, shareable monkey bread. Prepare to have your taste buds transported to a tropical paradise with every delicious bite!

For those new to the delightful realm of “monkey bread,” let me introduce you to this fantastic concept. While the term might sound whimsical, monkey bread is a surprisingly simple yet incredibly satisfying sweet treat. Typically baked in a bundt pan, it consists of small balls of dough, often coated in cinnamon sugar, layered and then drizzled with a rich, buttery glaze. The magic happens when it bakes: the individual pieces fuse together, yet remain easy to pull apart with your fingers, making it a perfect communal dessert or breakfast treat. This is actually my first time making monkey bread, and I must confess, I’ve been a little too focused on cupcakes lately. But it’s high time the bundt pan reclaimed its rightful place in the baking spotlight!

The Irresistible Fusion: Pineapple Upside Down Cake Meets Monkey Bread

The inspiration for this recipe comes from the timeless appeal of pineapple upside down cake. This iconic dessert, with its caramelized pineapple rings and maraschino cherry centers, has graced dessert tables for generations. Its perfect balance of sweet, tart, and buttery flavors makes it a perennial favorite. We asked ourselves: how could we elevate this classic even further? The answer was clear – infuse its distinct charm into the playful, pull-apart format of monkey bread.

Imagine the golden, buttery crust of pineapple upside down cake, complete with those juicy pineapple rings and bright red cherries, now forming the delectable top (which becomes the bottom when inverted!) of a soft, sweet bread. Each piece you pull away reveals a miniature explosion of tropical flavor, perfectly complemented by the sugary dough. It’s an innovative dessert that brings together the best of both worlds, offering both nostalgia and novelty in one impressive package.

It was really fun to combine pineapple upside down cake with monkey bread. The flavors paired so well.

Ingredients

  • 1 package Fleischmann’s® Simply Homemade® Country White No Knead Bread Mix

  • 1 cup very warm tap water

  • 1 stick butter, melted (1/2 cup)

  • ½ cup brown sugar

  • ¼ cup granulated sugar

  • Pineapple slices

  • Maraschino cherries

Instructions

  • 1. Generously grease a bundt pan with non-stick cooking spray or butter to prevent sticking and ensure a perfect release. Set it aside.
  • 2. In a small saucepan, combine the melted butter and rich brown sugar over low heat. Stir occasionally until the butter is fully melted and the brown sugar has dissolved, creating a smooth, luscious caramel sauce.
  • 3. Carefully pour most of this enticing caramel mixture into the bottom of the prepared bundt pan, spreading it evenly. Reserve a small portion of the mixture for a glorious drizzle later.
  • 4. Arrange the pineapple slices decoratively over the caramel in the bottom of the bundt pan. For that classic pineapple upside down cake look, place a vibrant maraschino cherry in the center of each pineapple slice.
  • 5. In a large bowl, combine the Fleischmann’s bread mix and yeast packet. Stir them together until well blended. Add 1 cup of very warm tap water (ensure it’s warm, not hot, as extremely hot water can kill the yeast) and stir with a spoon until a cohesive dough ball forms.
  • 6. In the same bowl, use your hands to gently flatten the dough, then fold it in half. Repeat this flattening and folding process a few times. If the dough feels too sticky, a light sprinkle of flour will help. Pinch off small portions of dough, roll each into a smooth ball between your palms, then roll each ball in a separate bowl of granulated sugar, ensuring an even coating. Carefully place these sugar-coated dough balls into the bundt pan, layering them over the pineapple and cherries.
  • 7. Drizzle the remaining butter/brown sugar mixture evenly over the top of the dough balls in the bundt pan.
  • 8. Cover the bundt pan loosely with plastic wrap or a clean kitchen towel. Allow the dough to rise in a warm, draft-free place for approximately 25 minutes, or until it has almost doubled in size. This crucial step ensures a light and fluffy monkey bread.
  • 9. While the dough is rising, preheat your oven to 350º F (175º C).
  • 10. Bake the monkey bread for 28-32 minutes, or until a wooden skewer or toothpick inserted into the center comes out clean, indicating it’s fully cooked. The top should be golden brown and the pineapple underneath beautifully caramelized.
  • 11. Once baked, remove the bundt pan from the oven and let the monkey bread rest in the pan for 10-15 minutes. This cooling period is vital to allow the caramel to set slightly and prevent the bread from falling apart when inverted. After resting, carefully invert the bundt pan onto a large serving plate.
  • 12. Serve warm and watch it disappear! Each delicious piece can be easily pulled off and enjoyed.

It’s a dessert that invites interaction and shared enjoyment, perfectly embodying the spirit of communal dining.

Tips for Monkey Bread Success

  • Greasing is Key: Don’t skimp on greasing your bundt pan! This is crucial for easy inversion and to prevent your beautiful monkey bread from sticking. Butter or non-stick spray, applied generously, will ensure a smooth release.
  • Warm Water, Not Hot: When activating the yeast, ensure your tap water is warm, around 105-115°F (40-46°C). Water that is too hot can kill the yeast, preventing your dough from rising, while water that is too cold will slow down the rising process significantly.
  • Perfect Dough Balls: Aim for uniformly sized dough balls. This ensures even baking and a consistent texture throughout your monkey bread. A light dusting of flour on your hands can help if the dough is a bit sticky.
  • Gentle Handling: After forming the dough balls and coating them in sugar, handle them gently as you place them into the bundt pan. You want to maintain their round shape and allow space for rising.
  • The Resting Period: The 10-15 minute resting period after baking and before inverting is essential. This allows the hot caramel to cool and solidify slightly, creating that perfect “upside down” sticky glaze without making a mess or losing its shape.
  • Serve Warm: Monkey bread is best enjoyed warm, straight from the oven. The soft, gooey center and caramelized exterior are absolutely divine when fresh.
