  • 3 large eggs

Crust

  • 1 ½ cups (170g) graham cracker crumbs
  • 5 Tbsp (72g) unsalted butter, melted

Chocolate Ganache

  • ¼ cup (59ml) heavy cream
  • ¾ cup (129g) chocolate chips

Caramel Sauce

  • 1 cup (198g) granulated sugar
  • ½ cup (113g) unsalted butter, 1 stick
  • cup (79ml) heavy cream

  • ½ cup pecan halves or chopped pecans

Instructions 

Crust Preparation

  • Preheat your oven to 350ºF (175ºC).
  • Finely crush graham crackers (or similar plain cookies) using a blender or food processor until you have 1 ½ cups of crumbs. In a small bowl, combine the graham cracker crumbs and melted butter, mixing until thoroughly incorporated.

  • Prepare your 8-inch springform pan for the water bath by wrapping the bottom and sides with two layers of heavy-duty aluminum foil. This is crucial for preventing water from seeping into the pan during baking. For added security, you can place the foil-wrapped pan into a large oven-safe turkey bag or slow cooker liner bag, rolling down the top of the bag so it doesn’t cover the cheesecake.
  • Press the crumb mixture evenly into the bottom of the prepared 8-inch pan. Use the bottom of a glass or a flat measuring cup to compact the crust firmly. If desired, you can press some of the crumbs slightly up the sides of the pan.

  • Add the large eggs one at a time, beating on low speed after each addition just until the yolk breaks and is barely mixed in. Avoid over-beating the eggs to prevent excess air in the batter.

  • Beat the entire mixture for one additional minute on low speed to ensure everything is well combined without incorporating too much air.
  • Carefully pour the prepared cheesecake mixture over the cooled graham cracker crust. Ensure both the crust and the pan have completely cooled before this step.
  • Place the 8-inch springform pan (still in its protective foil/bag) inside a larger 9×13-inch cake pan or roasting pan. Carefully fill the larger pan with hot water, reaching about 1 inch below the top edge of your springform pan’s foil wrapping.
