Gather Your Simple Ingredients

One of the best aspects of this recipe is its simplicity, both in method and ingredients. You’ll need just a handful of staple items to bring these delightful S’mores Bites to life. Here’s a closer look at what you’ll need and why each component is essential for that perfect s’mores experience:

All the delicious ingredients for your S’mores Bites.
  • Graham Crackers: The foundation of any good s’more. You’ll need whole graham crackers to crush into fine crumbs, forming the sturdy and sweet base of your bites. Feel free to use classic honey, cinnamon, or even chocolate graham crackers for a twist.
  • Powdered Sugar: This fine sugar binds the graham cracker crumbs and butter together, creating a tender, slightly sweet crust that holds its shape beautifully.
  • Unsalted Butter: Melted butter is crucial for creating the perfect consistency for your graham cracker crust. It adds richness and helps everything hold together, providing that satisfying crunch.
  • Milk Chocolate Bars: The heart of the s’more! Hershey’s milk chocolate bars are the traditional choice for their classic melty goodness. They break easily into small rectangles, fitting perfectly into the mini muffin cups. You can experiment with other types like dark chocolate, milk chocolate with almonds, or even peanut butter cups for a delightful variation.
  • Large Marshmallows: The crowning glory! Large marshmallows, cut in half, will give you that iconic puffy, golden-brown top that’s so irresistible. Their softness and sweet stickiness are what truly make a s’more.

Special Tools You’ll Need

The beauty of this recipe lies in its minimal equipment requirements. Beyond your standard kitchen essentials, the only specialized item you’ll need is a mini muffin pan. This pan is absolutely essential for creating the perfect bite-sized s’mores cups, ensuring each one has its own perfectly formed crust, chocolate layer, and marshmallow topping. A 24-cup mini muffin pan is ideal for a good batch.

How to Make Your Irresistible S’mores Bites

Creating these delightful S’mores Bites is a straightforward and enjoyable process. Follow these simple steps to achieve perfect, gooey results every time:

Step 1: Prepare the Graham Cracker Layer

The crust is the foundation of our S’mores Bites, providing that essential crunch and flavor.

  • Crush the Graham Crackers: Start by finely crushing your graham crackers into crumbs. You have a few options here:
    • For a quick and easy method, place the crackers in a large zip-top bag and use a rolling pin or the bottom of a heavy glass to crush them until fine.
    • Alternatively, a food processor will yield very consistent, fine crumbs in seconds.
    • Some prefer a manual “slap chop” device, which also works effectively for this task. The goal is fine, uniform crumbs, about 1 cup in volume.
  • Combine Ingredients: In a small bowl, combine the finely crushed graham cracker crumbs, powdered sugar, and melted unsalted butter. Mix thoroughly until the crumbs are evenly moistened and resemble wet sand.
  • Form the Crusts: Lightly grease a 24-cup mini muffin pan to prevent sticking. Evenly divide the crumb mixture among the cups. Using your fingers, a small spoon, or the back of a tart tamper, firmly press the crumbs down to form shallow, compact cups at the bottom of each cavity. This ensures a stable base for your s’mores.
  • Pre-Bake the Crusts: Bake the prepared crusts in a preheated oven at 350°F (175°C) for 4-5 minutes, or until the edges appear lightly golden. This pre-baking step helps set the crust, preventing it from becoming soggy once the chocolate and marshmallows are added, and gives it a delicious, slightly crisp texture.

This image perfectly illustrates the bites after their initial bake, with the rich chocolate squares being carefully placed into each warm, golden-brown graham cracker cup. The stage is now set for the final, magical ingredient!

Step 2: Add the Chocolate Layer

The moment the chocolate enters the scene is when these bites truly start to transform into the s’mores we all adore.

  • Place Chocolate: Carefully remove the hot muffin pan from the oven. Immediately place one rectangle piece of milk chocolate (from your Hershey’s bar, typically pre-divided) into each warm graham cracker cup. The residual heat from the crust and pan will help the chocolate begin to soften beautifully.

Step 3: Top with Marshmallows

Now for the iconic fluffy topping that makes s’mores so special.

  • Prepare Marshmallows: Take your large marshmallows and cut them in half crosswise. For an incredibly easy, non-sticky method to cut marshmallows, dip your kitchen scissors in a glass of cold water before each cut. The water creates a barrier, preventing the marshmallow from adhering to the blades. This simple trick makes cutting them a breeze!
  • Add Marshmallows: Place one marshmallow half, with the cut-side facing down, directly on top of the chocolate in each cup. This ensures a stable base for the marshmallow and allows it to melt evenly over the chocolate as it heats.
  • Final Bake: Return the muffin pan to the oven for another 2-4 minutes, or until the marshmallows are just slightly softened and beginning to puff up. Keep a close eye on them during this stage, as marshmallows can brown quickly.
  • Optional Golden Tops: For that classic toasted s’mores look, you can briefly turn on your oven’s broiler for 1-2 minutes. Watch constantly! The marshmallows will turn a beautiful golden brown very quickly under the broiler. This step is optional but highly recommended for an authentic s’mores appearance and flavor.

The entire process, from crushing crackers to the final golden marshmallow, is designed for ease and efficiency. The “hardest” part, as mentioned earlier, might just be crushing those graham crackers—though with the right tool, it’s a quick job!

Total Time Required

These S’mores Bites are remarkably quick to prepare, making them an ideal last-minute dessert or a fun project for spontaneous cravings:

  • Crust Prep: Approximately 5 minutes to crush crackers and mix ingredients.
  • Crust Bake: Around 5 minutes for the initial bake to set the graham cracker base.
  • Assembly: About 4 minutes to place the chocolate and marshmallow halves into the cups.
  • Final Bake & Toast: Just 2-4 minutes until gooey, with an optional 1-2 minutes under the broiler for that perfect golden finish.

From start to finish, you’re looking at a total time of roughly 17-20 minutes for warm, ready-to-devour S’mores Bites!

Pro Tip: Marshmallow Cutting Made Easy

As mentioned in the instructions, tackling sticky marshmallows can be a small challenge. Here’s a detailed explanation of the easiest, non-sticky way to cut large marshmallows in half:

Keep a glass of cold water right beside your workstation. Before each cut, dip your kitchen scissors into the water, allowing a thin film of moisture to coat the blades. The water acts as a lubricant and a barrier, preventing the marshmallow from sticking to the scissors. You’ll find that the marshmallow slices cleanly and easily, without any frustrating goo buildup. Repeat dipping the scissors for each marshmallow for consistent, mess-free results. This simple trick makes a significant difference in the preparation process!

After you’ve savored your freshly baked S’mores Bites, you might find yourself with leftover chocolate bars. Don’t let them go to waste! Enjoy them as a sweet snack, or, if you’re planning a future outdoor adventure, save them for your next authentic bonfire experience!

Total Time: 17 minutes
Servings: 24 bites

An incredibly easy S’mores recipe and one of our favorite desserts to make all year round. S’mores Bites offer a delightful twist on the classic s’mores dessert, perfectly sized and baked right in your oven!

Equipment

  • Glass Mixing Bowl
  • Mini Muffin Pan (24-cup)
  • Kitchen Scale (optional, for precise measurements)
  • Rolling Pin or Food Processor (for crushing crackers)
  • Kitchen Scissors

Ingredients

  • 7 whole graham crackers (equals 1 cup, finely crushed)
  • ¼ cup (28g) powdered sugar
  • 6 Tbsp (86g) unsalted butter, melted
  • 2 milk chocolate candy bars (e.g., Hershey’s, 1.55 oz each), divided into rectangles
  • 12 large marshmallows, cut in half

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Finely crush the graham crackers into crumbs. You can use a food processor for uniform results, place them in a zip-top bag and crush with a rolling pin, or use a slap chop. Aim for approximately 1 cup of fine crumbs.
  3. In a small bowl, combine the graham cracker crumbs, powdered sugar, and melted butter. Mix well until all crumbs are moistened and resemble wet sand.
  4. Lightly grease a 24-cup mini muffin pan. Evenly divide the crumb mixture among the cups. Press the crumbs firmly down into each cup to form shallow, compact crusts.
  5. Bake the crusts for 4-5 minutes, or until the edges are lightly golden and set.
  6. While the crusts are baking, prepare the chocolate and marshmallows. Break the milk chocolate candy bars into their pre-divided rectangle pieces. Cut each large marshmallow in half crosswise. For easy, non-sticky cutting, dip your kitchen scissors in cold water before each cut.
  7. Remove the muffin pan from the oven. Immediately place one chocolate rectangle into each warm graham cracker cup.
  8. Place one marshmallow half, cut-side down, on top of the chocolate in each cup.
  9. Return the pan to the oven and bake for another 2-4 minutes, or until the marshmallows are slightly softened and puffy.
  10. For beautifully toasted marshmallow tops, carefully turn your oven to broil. Broil the S’mores Bites for 1-2 minutes, watching them continuously to prevent burning, until they reach your desired golden-brown color.
  11. Allow the S’mores Bites to cool on a wire rack for about 15 minutes before carefully removing them from the pan. This cooling time helps them set and makes them easier to handle.
