  • 2 large eggs
  • ½ cup (113g) unsalted butter, 1 stick, melted
  • 1 ½ tsp vanilla extract
  • ½ cup (114g) sour cream

For the Buttercream Frosting

  • ¾ cups (170g) unsalted butter, 1 1/2 sticks, softened to room temperature
  • ½ cup (118ml) vegetable shortening
  • 3-4 cups (339-454g) powdered sugar
  • ½ tsp vanilla extract
  • A dash of milk, if frosting becomes too thick

For the Octopus Decorations

  • Blue/Teal food coloring (gel preferred for vibrant color)
  • Orange food coloring (gel preferred)
  • Large marshmallows (one per cupcake)
  • Orange candy melts, plus a small amount of vegetable shortening
  • Edible candy eyes (two per marshmallow octopus)

Instructions

Preparing the Vanilla Cupcakes

  • Preheat your oven to 350°F (175°C). Line a 12-cup muffin pan with paper cupcake liners. This ensures the cupcakes bake evenly and prevents sticking.
  • In a medium-sized bowl, whisk together the dry ingredients: flour, baking powder, baking soda, salt, and granulated sugar. Make sure they are well combined to ensure leavening agents are distributed evenly. Set this mixture aside.

  • In a separate large mixing bowl, combine the wet ingredients: eggs, melted butter, vanilla extract, and sour cream. Beat these together until the mixture is smooth and fully incorporated.

  • Gradually add about half of the dry flour mixture to the wet ingredients, stirring gently with a spatula or on low speed until just combined. Avoid overmixing. Then, add the remaining half of the flour mixture and continue to stir until a smooth batter forms. Overmixing can lead to tough cupcakes.
  • Divide the cupcake batter evenly among the prepared muffin cups, filling each about a little more than half full. This allows room for the cupcakes to rise without overflowing.
  • Bake for 14-16 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Once baked, remove from the oven and let them cool in the muffin pan for a few minutes before transferring them to a wire rack to cool completely. Cooling completely is essential before frosting.

Crafting the Ocean-Inspired Buttercream Frosting

  • In a large mixing bowl, combine the room temperature butter and vegetable shortening. Beat them together using an electric mixer for 1-2 minutes until the mixture becomes light, fluffy, and well-creamed. This creates a good base for your frosting.

  • Begin incorporating the powdered sugar, adding about 1 cup at a time. Slowly beat the mixture after each addition until the powdered sugar is fully incorporated. Continue this process, adding enough powdered sugar (typically 3-4 cups) to achieve a thick, pipeable frosting consistency that isn’t too wet.

  • Stir in the vanilla extract until it is just combined. If your frosting becomes too thick, add a tiny dash of milk (half a teaspoon at a time) until you reach the desired consistency.

  • Divide the prepared buttercream frosting into two separate bowls. Allocate approximately two-thirds of the frosting to one bowl for your vibrant blue (or teal) “ocean” base, and the remaining one-third to the second bowl for the orange “octopus legs” frosting.
  • Carefully dye each bowl of frosting with the appropriate food coloring (blue/teal for the larger portion and orange for the smaller portion). Mix thoroughly until the colors are rich and evenly distributed. Gel food colorings are recommended for brighter, more intense shades without altering frosting consistency too much.

  • Transfer the blue frosting to a large piping bag fitted with a large piping tip (a Wilton 2D tip works beautifully for a swirled effect, or a large round tip for a smoother dome). Gently push and squeeze the frosting down to eliminate any air pockets, which can cause breaks in your piping.
  • Begin piping the blue frosting onto each cooled cupcake. Start from the outside edge and work your way inward in continuous circles, progressively stacking the frosting to create a dome-like effect. Refill your piping bag as necessary to maintain even pressure.
  • Next, transfer the orange frosting to a separate piping bag fitted with a small round piping tip. Again, remove any air pockets. On the sides of each blue-frosted cupcake, pipe four small, wavy “octopus legs” on each side (totaling eight per cupcake). Once the legs are piped, place your prepared octopus body (from the next step) on top of the blue frosting, positioning it to look like it’s emerging from the ‘ocean’.

Assembling the Adorable Octopus Bodies

  • To create the octopus bodies, melt about half of the orange candy melts with approximately 1/2 tablespoon of vegetable shortening in a small saucepan over very low heat on the stove. Stir occasionally, being careful not to burn the chocolate. This process can take up to 10 minutes for the candy melts to fully liquefy, so maintain low heat. Once the chocolate is smooth and melted, take one large marshmallow at a time and place it into the pot. Use a spoon to completely cover the marshmallow with the melted orange candy. Carefully remove the marshmallow with a fork, gently tapping off any excess chocolate, and then place the dipped marshmallow onto a silicone baking mat or wax paper to set. Repeat for all marshmallows. Once the candy coating has fully set and hardened, attach two edible candy eyes to each octopus marshmallow. Use a small dab of the leftover melted orange candy melts (reheat gently if needed) as “glue” for the eyes. Simply dip a toothpick into the melted candy, dab a tiny amount onto the marshmallow, press an eye into place, hold for a few seconds, and then repeat for the second eye. Allow the eyes to set before placing on the cupcakes.
