- If baking in batches, ensure any remaining batter is refrigerated while the first pan bakes. Place one pan in the center of the preheated oven and bake for 7 minutes at 425ºF (220ºC). Then, *without opening the oven door*, reduce the oven temperature to 350ºF (175ºC) and continue baking for another 15-17 minutes, or until a wooden skewer or toothpick inserted into the center of a muffin comes out clean.
- Carefully remove the muffin pan from the oven and allow the muffins to cool in the pan for 15 minutes before transferring them to a wire rack to cool completely. If baking subsequent batches, remember to reset the oven temperature back up to 425ºF (220ºC) before placing the next pan in.
